How the enzyme chymosim

 1) The DNA encoding the protein/enzyme is isolated from it's natural source, the stomach of the calf.

2) A copy of this DNA is inserted into the plasmid of a yeast cell. Plasmids are circular strands of DNA that can replicate independently from the chromosomes.

3) Plasmid containing DNA of enzyme is replicated within the yeast cell.

4) Chymosin in the yeast cell is identical to the one found in the stomach of calves and can be mass produced for industrial use
